Supercharged Scrambled Eggs

What’s so good about it...

​

I'm a huge fan of scrambled eggs as they are rich in protein, B vitamins, and essential minerals such as selenium that help to nourish a healthy metabolism. Curcumin, the antioxidant that gives turmeric its golden hue, has potent anti-inflammatory and anti-bacterial, gastrointestinal health properties, which have been linked to the management of inflammatory conditions. Silverbeet adds life and freshness to this delicious breakfast and is rich in potassium. Potassium is one of the most important minerals in the body. It helps regulate fluid balance, muscle contractions and nerve signals. Sauerkraut produces amazing amounts of a healthy probiotic that helps with digestion and a healthy immune system.

 

Ingredients

​

•3 free range / organic eggs
•1/4 teaspoon dried turmeric powder
•pinch of sea salt
•1 tbsp ghee 
•1/3 cup silverbeet (Swiss chard) sliced finely
•1 tsp cold pressed olive oil 
•1 Tbsp raw sauerkraut

Method

​

WHISK eggs, and sea salt and set aside.
PLACE ghee into a pan over a low to medium heat.
ADD the silverbeet and sauté gently for 1 minute until wilted. Remove from the heat.
HEAT a small 20cm pan over a medium heat with 1 teaspoon olive oil.
POUR in the egg mixture and gently stir through until the eggs start to set and become creamy.
ADD the silverbeet and fold through.
SERVE immediately topped with olive oil and raw sauerkraut
